
Perfect as a side, or as finger food with onion jam or chilli jam and a sour cream and chive dip
Ingredients
- 700g Thomas Farms Snow White potatoes
- 15g butter
- 1 egg
- 3 tbs plain flour
- Small bunch of parsley (finely chopped)
- Small bunch of basil (finely chopped)
- Salt
- Freshly ground pepper
- Oil
Method

Peel the potatoes and cut into chunks

Cook in salted water for about 20 minutes, then drain in a sieve

Rub them through the sieve while still warm

Stir in the butter. Add the egg, flour, parsley and basil, then stir thoroughly

Season with salt and pepper

Heat the oil in a frying pan – take soup-spoonfuls of the mixture and carefully slide them into the hot oil, flattening them slightly

Fry until golden brown on both sides
