Rosti

Make a large one and slice into portions, or small individual serves – golden, crunchy, simple and delicious


Ingredients

  • 800g Thomas Farms Snow White potatoes (boiled in their skins the day before)
  • Salt
  • 3 tbs of oil
  • 40g butter

Method

Peel the potatoes, grate coarsely and season with salt

Heat the oil and butter in a non-stick frying pan, add the grated potatoes and

Fry over a medium heat until golden, pressing the potatoes flat in the frying pan

Cover the rosti with a plate, turn the pan and plate upside down, then slide the rosti back into the pan – fry the other side until crisp and golden
